Tenemos la Navidad <\/strong>a la vuelta de la esquina. Es muy probable que caiga alg\u00fan jam\u00f3n en la mayor\u00eda de hogares en estas fechas. A continuaci\u00f3n, la mejor manera para sacarle mas rendimiento.<\/p>\n\n\n\n\n\n\n\n

Pasos a seguir<\/h3>\n\n\n\n

Lo primero<\/strong> a tener en cuenta si se va a consumir pronto o nos va a durar cierto tiempo. Si se va a consumir en unos 3 d\u00edas, se puede colocar con la maza hacia arriba. Sino, por lo general al durar mas tiempo, se colocar\u00e1 para empezar a cortarlo por la contramaza\/babilla.<\/p>\n\n\n\n

Teniendo un jamonero para su colocaci\u00f3n, se sujeta bien con el tornillo que trae para atravesar la ca\u00f1a y se clava abajo, en la punta, el clavo que suele traer en la parte plana el jamonero. Se recomienda de esta manera, mas pr\u00e1ctica, porque no molestar\u00e1n los huesos en el proceso del corte (tibia y f\u00e9mur) y no se secar\u00e1 la parte con menos grasa (babilla).<\/p>\n\n\n\n

Para empezar a su corte har\u00e1 falta un cuchillo grande para perfilar la ca\u00f1a rode\u00e1ndola con el filo. Marcando<\/strong> un corte perpendicular\u00a0 y diagonal a 2 cm. del hueso que sobresale, para a continuaci\u00f3n hacer un corte profundo en forma de cu\u00f1a dos dedos debajo del corte marcado. Se puede seguir pelando el jam\u00f3n, quit\u00e1ndole la corteza<\/strong> y grasa amarilla exterior; lo mejor para mantener su calidad es ir haci\u00e9ndolo a la par que se consuma. Siempre intentando hacer el corte lo mas recto posible.<\/p>\n\n\n\n

Las lonchas se cortan con el cuchillo jamonero<\/strong>, el cual debe de estar muy afilado<\/strong>. As\u00ed pues, saldr\u00e1n\u00a0 finas, sin surcos y uniformes en direcci\u00f3n contraria a la pezu\u00f1a.<\/p>\n\n\n\n

Intentar aprovechar lo m\u00e1ximo posible el jam\u00f3n, cortando incluso la parte mas duras de la carne en tacos. Son ideales para hacer caldos, sopas, guarniciones…<\/p>\n\n\n\n
